Flavorful vegetarian tacos that even meat-lovers will enjoy. Full of fiber and plant protein.
Preheat oven to 425°F
Toss sweet potato cubes with olive oil, cumin, chili powder, paprika, salt
Roast for 20-25 minutes until tender
Warm black beans in a pot with a splash of water
Warm tortillas in a dry pan
Fill tortillas with sweet potatoes and black beans
Top with avocado, cilantro, and a squeeze of lime
Add salsa or greek yogurt if desired
